Bay Leaf is the whole, dried leaf of the bay laurel tree. Bay leaves have a bitter, spicy and pungent flavour with camphor-like aroma. It is indigenous to Asia and the Mediterranean region. 

Bay Leaf is used to infuse flavour in long-simmering recipes and works well with chicken, beef, fish, lamb, soups, stews, pickles, meat marinades, lentils, citrus fruits, tomatoes, beans and rice dishes. Bay leaf should be added early in the cooking process for its flavour to fully permeate in the dish.

Bay Leaf works well in combination with Allspice, Garlic, Juniper, Oregano, Marjoram, Sage, Parsley and Thyme.
